Protein and Fiber Pancakes

1/2 C cottage cheese

1/2 C steel-cut oats [Use gluten-free oats for GF recipe]

3 egg whites (organic, range free)

milk (almond, coconut, or rice), to get pancake consistency

1 Tbsp. ground flax seed

Optional: 1 packet stevia

 

Mix all the ingredients together in a blender and continue to add milk until you get the mixture to a pancake batter consistency.  Cook until browned on both sides.  This batter makes very filling and hearty pancakes.

 

Tip:  I like to add frozen blueberries or a mashed banana and nuts to create a few different varieties of pancakes.
