I wanted to share with my awesome readers a fresh veggie dip we LOVE at our house! COWBOY CAVIAR- I'm getting back to my Idaho roots! :) We usually prepare this as a healthy game day chip dip... but with LDS General Conference coming up this weekend means some comfy couch time watching uplifting and guiding speakers on TV. This is my FAVORITE personal development conference of the year, which actually takes place every 6 months- how cool is that? It's free to anyone who has the desire to listen as it is broadcast over the satellite & radio, requires no travel, the dress code is ultra casual (sweats all the way!), and you can enjoy a healthy snack while absorbing the council and taking notes if you so desire!

So today I prepped this amazingly fresh & healthy snack for my family to enjoy throughout this weekend.
The best thing about Cowboy Caviar is that you can literally throw in any vegetables you have in your kitchen! Each time we make it it kinda turns out a little different- but this is our favorite concoction. Do you have these 5 foods in your kitchen? They'll set the base...
We also like to add corn & olives to ours. Here's the recipe below.
So you'll just prep all the vegetables and add them to a large bowl. Toss well to combine. In a small bowl (I just used the jar I juiced the limes in) whisk together the dressing ingredients and pour over all the veggies.
Give it a gentle toss to coat evenly and let the caviar sit for 10 minutes. This allows all the flavor of the dressing to absorb into the vegetables. Yum!
Scoop into serving bowls add tortilla chips and you have yourself a healthy snack filled with vegetables everyone will love!
